The first time I had Minestrone Soup I was several years ago at Olive Garden at lunch with my Mother in Law. Being a vegetarian she ordered the soup, salad and bread sticks while I ended up with something more beefy. Her soup looked good, she kindly offered me a taste, I tried it, loved it and wanted to create the same soup at home. Although, back then, my husband and I were newly weds and I didn't cook more than scrambled eggs, spaghetti, frozen pizzas and the handful of Mexican dishes my parents taught me. One fine day while reading the back of Del Monte can I ran across the recipe linked above. Simple to make and good too.
