My neighbor Rachel was the happiest person I have ever met.  Always smiling and laughing.  One year for Christmas she brought over some Meyer Lemons from her garden.  I ate them like an orange.  They were so good!  I wanted to make something delicous with them so I looked and looked through recipe books.  I found this: Baked Lemon Chicken.  Ms. Rachel has been walking with Jesus for one year and four months and one day.  I miss her terribly.

When I got married 10 years ago, (March 11, 2002) I received a 'wedding kit.'  It was a light purple bag given to me when we registered to get married that the county(?) gave me with coupons, recipes, samples, and so on.  Reynolds Wrap had a little booklet in there with coupons and recipes.  This Italian Chicken and Vegetables recipe was from the booklet.
We have an 8 year old daughter and 3 year old son.  I let them help make this because it's so simple. :)

I have a handful of friends I met online through the wonderful world wide web.  We have been friends for years and years thanks to message boards we use to use daily.  On the message boards, over the phone and in snail mail letters we chat about motherhood and everything else ladies can chat about.  The recipe linked above is one a friend sent to me years ago hand written on a index card.  Thanks Katy.  :)  I still have that index card today.
